Smoked Indian Chicken

Ingredients
  • 1 whole chicken
  • 1 tsp. cardamom
  • 1 tsp. yellow curry
  • ¼ cup lime juice
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. fennel seeds
Directions

Preparation

1. Butterfly whole chicken.

a. Place your whole chicken on a cutting board and grab your cutting shears.

b. Start with the tail area and cut up on either side of the spine, all the way up to either side of the neck. Then cut out and fully remove the backbone so the chicken starts to lie flat.

c. Once you've taken out the backbone, open it up with the skin side up and flatten it as much as possible. Using your palms, press down firmly on the top of the breasts to flatten it even more. You will hear a crack, which means you're doing it right.

d. Tuck the tips of the wings behind the breasts so they don't burn on the smoker

e. Now your chicken is ready for the smoker.

2. Combine cardamom, yellow curry, lime juice, garlic powder, onion powder and fennel seeds in large mixing bowl and mix until a paste is formed.

Cooking Instructions

1. Preheat the Vida by PADERNO Smart Pellet Grill on the smoke setting to 250º.

2. Place the chicken on the rack, and slowly smoke until the internal temperature of the breast meat is 165º. This should take approximately 2 hours depending on the size of the bird.

4. Baste the chicken with your spice for about 1.5 hours in the cooker.

5. Let the chicken finish cooking, the paste will begin to caramelize.

6. Remove chicken from the smoker and let rest for at least 10 minutes before cutting.

7. Cut, serve and enjoy!
