Bacon Apple Pie

Ingredients
  • 1 unbaked 9-inch pie shell
  • ¾ cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon each grated nutmeg and ground cardamom
  • ¼ teaspoon ground cloves
  • 6 cups granny smith apples (about 2 lb, total), peeled and sliced ½-inch wide
    10 slices applewood smoked bacon
Directions
  1. Place pie shell on baking sheet. In large bowl, blend brown sugar, cornstarch, cinnamon, nutmeg, cardamom and cloves together with fingertips.  
  2. Add apples, tossing to coat; transfer to pie shell, including any sugar and accumulated juices.  
  3. Weave bacon slices on top of pie filling, starting from centre and working out to edges. Weave in an over-under pattern with 5 pieces going vertically and 5 pieces going horizontally. Trim edges and pinch crust to seal filling in. 
  4. Preheat Vida by PADERNO Wi-fi Connected Smart Pellet Grill to 350°F, igniting 2 outer burners only, leaving centre area of grill turned off. Place pie in centre of grill; close lid and cook over indirect heat, checking periodically, for 1 hour 15 minutes, or until golden brown and bacon is crisp. 
  5. Allow pie to cool for 1 hour before slicing.
